I have a confession. I am addicted to peanut butter and chocolate. The two combined are absolutely heavenly.
Every Easter, I make chocolate-covered peanut butter eggs. They are absolutely delightful. Because I think they are absolutely delightful, I think everyone should make them. 🙂 So, here is the recipe!
1 16 oz pkg confectioner’s sugar
1 cup of creamy peanut butter
¼ cup of butter
1 Tbsp of milk
8 (1 oz) squares of semi-sweet chocolate
1 Tbsp shortening
In a mixing bowl, combine sugar, peanut butter, butter and milk ( if needed for moisture) until blended. Shape mixture into two ½ pound eggs or make a bunch of smaller eggs (about a Tbsp size each). Freeze eggs for one hour.
While the eggs are freezing, cut semi-sweet chocolate into small pieces and place in top of double boiler with shortening. Melt over medium heat, stirring frequently until smooth.
Swirl each small peanut butter egg in chocolate to completely cover then drain on wax paper.
