I so meant to get this up yesterday. But then I fell prey to YouTube Surprise Military Homecomings and Surprise Proposals. What can I say, I’m a sucker for a great story.
Anyway, this weekend was the first below 70 weekend we have had so far this season. Since fall is my favorite all time season, I thought I would celebrate this drop in temp by indulging in some of my favorite fall-type meals, as well as try a new fall-type dessert. And then we also did a few fun things this past weekend as well. Here’s the recap!
First, for lunch on Saturday, we had the ever classic Tomato soup and Grilled Cheese. I used to hate tomato soup, but there is just something magical about dipping your toasted cheese sandwich into the warm soup and taking a bite.
Then, on Sunday lunch, I made Turkey Chili in the crockpot. I used this recipe. We had Ritz crackers crumbled on top, and it hit the spot.
Now, for the new fall recipe venture, I made an apple pie from scratch. I used this recipe, although I used Mcintosh Apples instead of Northern Spy, and I can honestly say it is the prettiest apple pie I have ever made. Haha! It was actually good too!
I learned a lot in the making of this pie. My husband taught me a neat trick when rolling dough. I’m sure everyone knows it, but I thought I would share a small video I did. Also, something I didn’t add to the video, the dough would stay on the parchment paper long enough to transfer to the pie plate as well.
In the clean up, after the pie was in the oven, I realized I could use a dustpan to help catch all the crumbs on my counter. It was so easy to just wipe all the crumbs into the dustpan and then empty that into the trash! I was so proud that I created my own “life hack”.
We also went to the State Fair of Texas on Saturday. Every year we get a picture on the Ferris Wheel.
Then, we each pick a fried food to try from the top ten list of the year. Michael picked the Fried Red Velvet Cupcake. This was dangerously good.
I also decided to go for a sweet. I got the Golden Fried Millionaire Pie. I even got a pic of the description. It was good, but the cupcake was definitely better.
On Sunday, we were invited by some friends Michael knows from work to a private screening of Beyond the Farthest Star. It is a faith-based movie that I would say is on par with Fireproof. I actually enjoyed this movie a little more. It was definitely a darker piece. The beginning was a little chaotic, but I think it was done on purpose, because life can get chaotic. The end brought tears running down my face. It wasn’t tied up in a happy little bow, but it was really good. Here’s the trailer.
Renee O’Connor was in the film (she played Gabrielle in Xena Warrior Princess), but I didn’t recognize the other actors. The main two actors were there that night, and we got a picture with them. They were super nice, as was the director who was there as well. If you have an opportunity to see this film, I would highly recommend it!
So, that was my weekend. It was crazy, busy, and fun. Can’t wait to see what the next weekend will bring, but more on that next week!
